Optimism Cocktail

Did you know there's an Optimism Cocktail created right here in New Zealand?

The cocktail recipe appears in an entertaining book titled 'an Optimist's Tour of the Future'.

The book follows British writer and comedian, Mark Stevenson, as he travels the world to find out what the future has in store for us. He challenges common fears about the future by considering the internet, space travel and climate change in an optimistic light, interviewing various people along the way.

One of his interviewees was Nick Gerritsen, owner of Carbonscape, an award-winning New Zealand company which uses innovative technology to create a more sustainable environment.

Stevenson was interviewing Gerritsen at Le Cafe in Picton, when the idea to create an "Optimist's Cocktail" arose. They asked cafe owner, Peter Schoni, to create the cocktail that would be known as "Optimism" with a tequila and champagne base.

Stevenson describes the Optimism Cocktail as "the perfect drink for a summer evening". As we get move towards the end of winter, why not try making your own Optimism Cocktail at home!
